When school is in in session and you're on a tight schedule, having a repertoire of fast, easy and satisfying meals in your back pocket is key.
Tortillas come in handy for to-go breakfasts, make-ahead lunches, quick weeknight dinners, and after-school snacks you can feel great about! Kid Approved Recipe #1: Tortilla Pizzas with Roasted Red Peppers

This recipe comes together in 20 minutes or less and is perfect for busy nights where you want a delicious meal in a snap. It's incredibly easy to make and full of flavor.
8 TortillaLand® Flour Tortillas
3/4 cup pizza sauce
1 teaspoon granulated sugar
1 1/2 cups mozzarella cheese
1 jar 12 ounce of roasted red peppers
1 tablespoon olive oil
1 teaspoon dried parsley
Preheat oven to 425℉. Place 2 large cookie sheets near your work station.
Heat tortillas in a pan according to the package directions. Place cooked tortillas on the cookie sheets.
In a small bowl combine the pizza sauce and sugar, stir well. Spoon over the cooked tortillas and smooth out.
Sprinkle cheese evenly over each tortilla.
Heat 1 tablespoon of olive oil in pan. Add the roasted red peppers and cook over medium heat, stirring occasionally until the peppers just start to crisp on the edges. This takes about 3 to 5 minutes. Roughly chop them by hand or pulse very briefly in food processor into chunky pieces. Using tongs place the roasted red peppers randomly around the tops of the tortilla pizzas.
Place pizzas in the oven and cook for about 5 to 7 minutes or long enough to melt the cheese properly. Remove from oven, toss parsley over top. Serve immediately.
Kid Approved Recipe #2: Chicken & Marinated Veggie Quesadillas

These Chicken & Marinated Veggie Quesadillas take less than 30 minutes to make and are the perfect easy mealtime solution the whole family will love! With chicken, cheese, onion and zucchini and a zesty dressing, this is one you will make time and again.
8 TortillaLand® Flour Tortillas
1/2 cup Italian salad dressing
1 small red onion sliced into moons
1 small zucchini, shredded
16 oz Tyson® Grilled & Ready® Chicken
6 oz shredded cheddar cheese
Optional: Plain Greek Yogurt, Sour Cream, Tomatoes or Salsa for serving
Place red onion and zucchini in a small bowl and pour the dressing over. Allow to sit for at least 15 minutes. Drain.
Spray a large skillet with oil and heat chicken until warm, about 5 minutes.
Wipe the pan clean and cook tortillas over medium heat for 30 seconds per side.
Spray pan again and add a tortilla. Top with cheese, chicken and marinated vegetables. Fold over and cook until brown, about 5 minutes per side.
Serve with yogurt or sour cream and chopped tomatoes or salsa.

4 TortillaLand® Flour Tortillas
1/2 cup regular mayo
1/2 cup freshly grated Parmesan cheese
4 pieces of leaf lettuce
2 large Roma tomatoes
1 large avocado
2 Cups of Tyson® Grilled & Ready® Chicken or prepared rotisserie chicken, or leftover grilled chicken
1/3 cup Italian salad dressing
Salt and freshly cracked pepper
1/2 cup croutons
10 leaves fresh basil
Prepare the tortillas according to package directions and let cool slightly.
Spread the mayo evenly among all the tortillas -- about 2 tablespoons per tortilla. Top each tortilla with about 2 tablespoons Parmesan cheese and 1 large leaf of lettuce.
Thinly slice the tomatoes and divide evenly among the 4 tortillas. Remove the pit and skin of the avocado, thinly slice, and add an even amount of slices to the tortillas.
Top the tortillas evenly with the prepared chicken.
Drizzle the Italian dressing evenly on each tortilla on top of the chicken and add freshly cracked pepper and salt to taste.
Slightly crush the croutons and divide them evenly among the 4 tortillas.
Ribbon the basil and divide pieces evenly among the tortillas. Roll them up tightly and serve immediately.
