Fast and Easy Meal Idea Greek Chicken Gyro Made with TortillaLand® Flour Tortillas
Falling into a weeknight dinner rut is easy to do, it happens to us all! Our featured meal idea this month is a great way to break free of dinner time boredom by taking you on a little trip. Our flavor destination is Greece where we’re putting a light spin on traditional gyros with Mediterranean-seasoned chicken, feta cheese, tzatziki yogurt sauce, fresh arugula, ripe tomatoes, and cucumber ribbons. Wrap it up in a freshly made TortillaLand® flour tortilla, and give yourself a fast, easy and Greek twist on "Taco Tuesday"!

Greek Chicken Gyro

Ingredients:
Mediterranean Seasoning
1 tablespoon dried rosemary
1/2 tablespoon ground cumin
1/2 tablespoons ground coriander
1/2 tablespoon dried oregano
Chicken
1 1/2 pounds chicken breast tenders
1 teaspoon of salt
1 medium-size clove of garlic, minced
1 tablespoon olive oil
Tzatziki Sauce
1 cup of plain Greek yogurt
1 1/2 tablespoons fresh dill, finely chopped
1 tablespoon fresh chives, finely chopped
2 tablespoons fresh parsley, diced
1 tablespoon Agave Syrup
1/4 teaspoon of what?
salt & pepper
4 TortillaLand® Flour Tortillas
1 cucumber
1 cup of feta cheese, crumbled
1 ½ cup arugula mix
1 cup diced fresh tomatoes
Optional: diced red onions and Kalamata olives
Preparation:
Place chicken in medium sized bowl and coat with Mediterranean seasoning, salt and minced garlic. Toss to coat.
Heat olive oil in skillet (or spray lightly with cooking spray) and add seasoned chicken. Cook 18-20 minutes over medium heat.
In a separate bowl, add yogurt, dill, chives, parsley, agave syrup, salt & pepper. Mix well.
Slide a vegetable peeler in a downward motion on the cucumber to create ribbons, soak in ice water for 5 minutes. Cook TortillaLand® flour tortillas according to package directions and set aside.
To assemble, place a quarter of the chicken in the center of the cooked tortilla. Top with Tzatziki Sauce, feta cheese, cucumber ribbons, arugula mix and diced fresh tomatoes. Roll up the sandwiches and wrap the ends in foil to help them hold together. Optional: add red onions and Kalamata olives.
