Tortilla Pizzas with Roasted Red Peppers

roasted red pepper pizza

Prep Time: 10 minutes

Cook Time: 10 minutes
Total Time: 20 minutes
Yield: 8 servings

TortillaLand® Flour Tortillas
¾ cup pizza sauce
1 teaspoon granulated sugar
1½ cups mozzarella cheese
1 (12 oz.) jar of roasted red peppers
1 tablespoon olive oil
1 teaspoon dried parsley

Preheat oven to 425℉. Place 2 large cookie sheets near your work station.

Cook tortillas in a pan according to the package directions. Place cooked tortillas on the cookie sheets.

In a small bowl combine the pizza sauce and sugar, stir well. Spoon over the cooked tortillas and smooth out.

Sprinkle cheese evenly over each tortilla.

Heat up 1 tablespoon of olive oil in the same pan you cooked the tortillas. Pour roasted red peppers into the pan and cook over medium heat, stirring occasionally until the peppers just start to crisp on the edges.

Remove roasted red peppers from pan and roughly chop into pieces. You could also toss them into a food processor and pulse briefly (you want them to be chunky pieces). Top each pizza with the roasted red peppers and place in the oven and cook for about 5 to 7 minutes (just long enough to melt the cheese).

Remove from oven, toss parsley over top. Slice, serve and enjoy!

1 tomato, seeded and chopped
2 tablespoons sliced green onions

TortillaLand® Flour Tortilla
4 slices of ham
1/2 cup shredded cheese (provolone, Parmesan, cheddar)
extra virgin olive oil
3-4 basil leaves, sliced thin

Preheat oven to 450℉.

Place the tortilla on a flat surface. Shingle the 4 slices of ham on top of the tortilla, leaving a lip uncovered at the top. Cover the ham with the cheese.

Place on a lined baking sheet seam side down. Brush the roll with olive oil and bake for 10 minutes.

Once cooked, slice the tortilla ham roll with a serrated knife, top with the balsamic tomatoes, and finish with the sliced basil.
