Pizza made with our flour tortillas are the perfect weeknight dinner solution that can be made with minimal effort. They can also be a fun appetizer option if you are having friends over!
Next time you are in a pinch for dinner or last minute entertaining, try making these easy BBQ Chicken Mini Pizzas with TortillaLand® Tortillas (or just try some variation of your own)!
- 4 TortillaLand® Uncooked Flour Tortillas
- 1 1/2 cups of Barbecue Sauce (store bought or homemade)
- 1 1/2 cups Salsa
- 10-12 oz shredded rotisserie chicken or diced chicken breast
- 16 oz shredded Cheddar or Colby Jack cheese
- Diced cilantro and scallions (optional)
Pre-heat the grill medium to medium-low (you can also use an indoor grill pan on the stove). Combine BBQ sauce and salsa into a medium-sized bowl, add chicken and set aside. Place 2-4 tortillas on the grill and cook them just until the undersides start to brown slightly and get grill marks.
Flip tortillas onto a cookie sheet pan, grilled side up. Spread the chicken, BBQ/salsa mix onto each tortilla and top with cheese.
Slide the pizzas back onto the grill. If using an outdoor grill, we recommend that you close the lid briefly, and leave them on long enough for the bottoms to cook and the cheese to melt (careful, they cook quickly once the grill is hot).
Remove pizza from grill and top with cilantro and scallions, slice into wedges and enjoy!
