Create a Fabulous Fiesta Taco Bar for Cinco de Mayo

Tasty Homemade Carnitas Tacos with TortillaLand® Corn Tortillas topped with Mexican Pickle, Queso Fresco, Slaw, Avocado, Cilantro and Lime.

What's not to love about Cinco de Mayo? This festive holiday is a celebration of Mexican culture and features lively parties, festivals, music, and of course, Mexican food and drink!

If you are hosting a Cinco de Mayo soiree, serve something that will "wow" your guests, like this traditional tacos de carnitas dish using tender, slow cooked meat.

These irresistible tacos, topped with Mexican pickle, queso fresco, slaw, avocado, cilantro and lime wrapped in TortillaLand® Corn Tortillas, just may be the best tacos you've ever eaten. They are so simple to prepare and much of it can be made the night before.

Traditional carnitas are typically made with pork, but they can also be made with inexpensive cuts of beef and chicken- whatever you prefer as long as its enough to feed the whole gang!

Day Before Your Cinco de Mayo Party

Step One - Carnitas:
Prep your meat the day before your soiree by generously coating it with a spicy rub made of diced parsley, salt, pepper, garlic, chipotle chili, cayenne chili, ancho chili, cinnamon, paprika (or use your favorite meat rub recipe if you have one) and give it a quick sear on both sides on a hot oiled skillet on both sides.

Next, place the seared meat in a large slow cooker. Pour equal parts beer and chicken stock until the meat is covered in liquid. Add a pinch or so more of your spice mix and cook on a low setting for at least 4-6 hours until it is moist and pulls right off the bone with ease. Refrigerate it in the same liquid.

Step Two - Make Pickled Veggies:
While your meat is cooking, slice carrots, garlic and jalapeño. Heat a tablespoon of oil in a skillet and sauté the garlic and jalapeño until soft (1-2 minutes) then add your carrots. Sauté for 3 minutes, add a pinch of peppercorns, a bay leaf or two and then gently add enough apple cider vinegar to almost cover all the vegetables. Let simmer on low for 15 minutes. Allow to completely cool. Pour everything into a plastic container and store in fridge overnight.

Step Three – Prep Slaw:
Shred 1/2 of a cabbage; thinly slice a small green apple and radish. Throw into a bowl or plastic container and refrigerate overnight.

Step Four – Prep Additional Toppings:
Slice lime, cilantro and avocado (keep the pits near avocado slices if preparing the night before). Crumble your Queso Fresco.

Day of the Party

Step Five– Prep Slaw:
The morning of your party, simply toss the cabbage, apple and radish with a mixture of mayonnaise, salt, pepper and rice vinegar.

Step Six - Reheat the Carnitas:
Give your meat a quick reheat on the stovetop or microwave (be careful not to overcook). Pull the meat out of the liquid, shred and serve.

Step Seven– Serve:
With all your ingredients ready to go - simply take out of the fridge and place each component in a separate serving bowl on your counter or table. Warm up the carnitas, then heat up a skillet for your tortillas. Tortillaland® Corn Tortillas are perfect for this dish, but feel free to mix it up with our Flour Tortillas.
