Spicy Hot Cocoa Tacos
Serves: 4 servings

1 (12ct or 18ct) package of TortillaLand® Flour Tortillas
1 teaspoon cayenne pepper
1 teaspoon ground ginger
1 cup dark chocolate chips
2 ½ cups heavy whipping cream
¼ cup granulated sugar
Garnish: Mini marshmallows & chocolate syrup
Preheat the oven to 375 ℉. Remove 2 tortillas from the package and spray both sides with canola oil. Drape the tortillas directly over 2 bars in the heated oven rack. Bake for 10 minutes or until crispy. Remove from oven and let cool.
To make the mousse, beat the eggs and sugar in a stand mixer until fully mixed. Separately, heat 1 cup of the heavy whipping cream in a saucepan until hot. Pour the cream into the mixer bowl with the eggs until fully integrated. Pour that whole mixture back into the saucepan, add the ginger and cayenne pepper, and cook over medium-low heat for approximately 7-10 minutes (or until thickened into a custard-like consistency). Remove from heat, mix in the chocolate until smooth, and refrigerate until cool.
Whisk the remaining 1 ½ cups of heavy whipping cream in the stand mixer until thick and then fold in the cooled chocolate mixture until a rich mousse is formed.
Assemble the tacos by piping in a generous amount of the spicy hot cocoa mousse in the baked taco shell. Garnish with marshmallows and chocolate syrup. Enjoy!
