Rainbow Veggie Roll-Ups

Flour

Ingredients

TortillaLand® Flour Tortillas

¼ cup silken tofu

3 tablespoons peanut butter, smooth

2 tablespoons soy sauce

1 tsp rice wine vinegar

¼ teaspoons salt (optional)

¼ red cabbage, shredded

½ green bell pepper, julienned

1 celery stick, julienned

½ cup shredded carrots


Preparation

In a bowl, add the tofu, peanut butter, soy sauce, rice wine vinegar and salt. Mix well until the mixture spreadable. Set aside.

Cook 2 TortillaLand® Flour Tortillas according to package directions.

Place the heated tortilla on a plate to cool. Spread an even layer of the peanut butter mixture on the tortilla.

Layer half of the red cabbage, green bell peppers, celery, and carrots in center of the tortilla. Roll as tightly as possible and cut into smaller pieces and set aside.

Repeat above steps on the second tortilla. Serve or refrigerate immediately.
