Breakfast Quesadilla

1 Tsp olive oil, divided

1/4 Zucchini, diced

1/4 Small yellow onion, diced

1/4 Red bell pepper, diced

2 Mushrooms, diced

2 Eggs, beaten

2 TortillaLand® Flour Tortillas


Preparation

Preparation:

Heat 1/2 tsp oil in a nonstick skillet. Cook veggies until tender-crisp. Remove from pan. Add remaining oil to skillet. Cook eggs, stirring with a spatula until soft and fluffy.

Heat a cast iron skillet or griddle over medium low heat. Cook tortillas about 30 seconds per side. Stuff each tortilla with eggs, cooked veggies, and cheese on one half. Fold over tortillas and cook on each side until cheese is melted. Serve with salsa!
