Turkey Pesto TortillaLand Wraps

We always look forward to Thanksgiving at TortillaLand. That's because we know there's going to be plently of turkey leftovers. And, to us, turkey leftovers and fresh, uncooked TortillaLand tortillas are a perfect combination.

Take our recipe for Turkey Pesto TortillaLand Wraps. It's a perfect combination of leftover turkey, fresh pesto and fresh, uncooked TortillaLand tortillas. It's a multi-cultural mix of American, Mexican and Italian and a big post-Thanksgiving crowd-pleaser.  Here's our recipe.

Pesto

  • 3 Cups: Basil Leaves (You can use ½ Spinach and half Basil)
  • 1 Cup: Pine Nuts (You can use ½ Pine Nuts and half almonds)                
  • 1 Cup: Olive Oil                                                                                        
  • 1/2 Cup: Parmesan Cheese                                                                          
  • 3 Cloves: Garlic (Fresh)                                                                                
  • 1/4 Cup: Lemon Juice                                                                                     
  • 1 Teaspoon: Salt                                                                                           

Directions: Put Pine Nuts in a food processor until small particles. Add garlic and ½ of the oil add salt and lemon juice. Add basil and the rest of the oil adding at the end the cheese.

To Make the Turkey Pest Wrap:

  • In one side of a Flour Tortilla put some of the pesto to cover evenly
  • Add the Turkey leftovers
  • Add some of your favorite cheese
  • If you like add tomato slices
  • Fold the Wrap and cook on the grill with some butter
