
By now, you know the term "Gluten Free" and it is likely many of you or members of your family are following a gluten free diet. Yet, how much do we know about Celiac Disease and gluten sensitivity? According to the Center for Celiac Research, University of Maryland, an estimated 6 % of the U.S. population (18 million people) may be classified with gluten sensitivity. Over 3 million people in the U.S. (70 million worldwide) suffer from Celiac Disease, a genetically linked autoimmune disorder where certain types of grain-based products set off an immune response that causes damage to the small intestine. Unfortunately, many of those afflicted with this condition go undiagnosed.

- 13% of Americans have purchased gluten free products in the last 6 months
- Celiac Disease is increasing in prevalence, now affecting 1 in 100
- Americans companies are increasingly offering gluten-free packaged foods to meet increasing demand
- Restaurants are increasingly serving this need, including chains such as Boston Market, Chili’s, Denny’s, Fresh City, Macaroni Grill, Pizzeria Uno’s, Qdoba, Subway, and Wendys.
This is why organizations such as the Celiac Sprue Association®, the largest non-profit celiac support group in America, are so important. CSA is dedicated to helping individuals with celiac disease and gluten induced sensitivities through research, education and support. Their member-volunteers work locally, regionally and nationally to increase awareness, improve diagnosis and treatment, and help all celiacs worldwide manage the gluten-free lifestyle.
