Day Before Prep
Step One - Carnitas: Pork shoulder roast or pork butt are great, economical cuts of meat to put in the slow cooker and walk away from for hours. No fussing required! Get enough to feed your gang and the day before the Super Bowl coat the pork with your favorite pork rub or create your own (I used: parsley, salt, pepper, garlic, chipotle chili, cayenne chili, ancho chili, cinnamon, paprika) and give it a quick sear on a hot oiled skillet on both sides.
Next, place it in your crock-pot. Pour equal parts beer and chicken stock until the meat is covered in liquid. Add a pinch or so more of your spice mix and then turn your crock-pot on to low. Check in 4 hours. More than likely it will still need a few more hours. Check on it again in 2 hours and keep checking until it is moist and pulls right off the bone with ease. Refrigerate it in the same liquid and on game day give a quick reheat on the stovetop or microwave. Pull the pork out of the liquid, shred and serve.
Step Two - Mexican Pickle: While your meat is in the crock-pot, slice carrots, garlic and jalapeño (mostly carrots with a small amount of jalapeño and garlic). Heat a tablespoon of oil in a skillet and drop in your garlic and jalapeño first, adding your carrots soon after. Sauté for 3 minutes, add a pinch of peppercorns, a bay leaf or two and then gently add enough apple cider vinegar to almost cover all the vegetables. Let simmer on low for 15 minutes. Allow to completely cool. Pour everything into a Tupperware container and store in fridge overnight.

Step Three – Quick Slaw: Shred cabbage; thinly slice green apple and radish. Throw into a bowl or Tupperware and refrigerate overnight. Morning of the game simply toss with a little mayonnaise, salt, pepper and rice vinegar.
Step Four – More Toppings: Slice lime, cilantro and avocado (keep the pits near avocado slices if preparing the night before). Crumble your Queso Fresco.

GAME DAY!!!
Step Five – Serve: With all your ingredients practically ready to go - simply take out of the fridge and place each component in a separate serving bowl on your counter or table. Warm up the carnitas, then heat up a skillet for your tortillas.
