When you see signs the fresh tortilla is coming to life (and it happens in as little as 30 seconds) - the little burn marks, the fluffing up of the Tortilla and the smell of the fresh dough; then, you know it's ready to turn over.
Repeat the process on the other side for another 30 seconds or so and there you have it - a fresh, made tortilla. This one took us about 60 seconds.
